Three Ingredient Raw Chocolate
ThIt goes without saying the chocolate always has (and probably always will be) my one vice. Whilst I still eat the occasional piece of Lindt or Cadbury, I much prefer to make my own three ingredient raw chocolate that is filled with wholefood goodness, tastes delicious and has no nasty sugar crashes.
This recipe is so simple, that I’ve been known to whip it up in the ad-breaks of Offspring and it’s ready to eat before the end of the episode….Talk about fuss-free health!
three ingredient raw chocolate
1/2 cup organic coconut oil
1/2 cup cacao powder
2-3 tbl Rice Malt Syrup
Combine all three ingredients in a bowl and mix until combined. If you live in a colder climate, you may need to gently heat the chocolate over a saucepan of boiling water until combined. Pour the chocolate into moulds or a lined baking tin and place in the freezer to set. This normally takes around 20 minutes.
Once you’ve mastered this basic raw chocolate recipe, feel free to experiment a little by adding some chopped nuts, goji berries, coconut flakes or cacao nibs for a chocolately crunch!
The always talented Georgia has shared a similar recipe for raw chocolate using cacao butter instead of coconut oil. Cacao butter has a beautiful rich aroma, and doesn’t melt as quickly as raw chocolate made with coconut oil (it is slightly more expensive than coconut oil, so if you’re on a budget coconut oil works just as well).
