Superfood Acai Bowl

One of my favourite nourishing breakfasts or snacks is a Superfood Acai Bowl!

The Summer months are a beautiful time of year to fill up on all the delicious seasonal berries that are available in the shops and farmers markets and incorporating Acai into your morning smoothies will ensure you are receiving a healthy dose of vitamins, minerals and antioxidants.

In the warmer months, I will often have a smoothie each morning for breakfast or make one in a mason jar as a quick go-to meal on the run. I throw in lots of nourishing goodies like berries, leafy greens and protein to help me stay full and make me feel vibrant. I often tell my clients that smoothies are a great option for those wanting to nourish themselves on the go!

Acai is a beautifully nourishing skin boosting food. This little superfood has over 42 times the antioxidants of fresh blueberries and 10 times that of Spirulina, over 50 essential nutrients and minerals, healthy fats (Omega 3,6 & 9) that help to fight free radical damage, increase collagen production, improve skin elasticity and moisture retention.

Not only is Acai a completely natural whole food, it is an anti-inflammatory which is brilliant for those who are wanting to detox, lower their cholesterol and promote healthy hormone production! I don’t know about you, but I don’t need any more convincing to dive into a nourishing bowl of goodness!

You can buy Acai in a few different forms from most health food stores, or online stores like i-herb. I recommend that my clients buy the Amazonia brand as they are Certified Organic and Fair Trade and free of all nasty pesticides and chemicals. Both the freeze dried powder and frozen smoothie packs are great added to smoothies, but if you are after a chilled Acai bowl you can’t go past the frozen smoothie packs!

The great thing about an Acai bowl is that you can let your creative juices run wild and create a flavour combination that you love!

What you’ll need – serves 2

  • 1 cup coconut water or almond milk
  • 1 frozen Acai smoothie pack
  • 1/4 cup frozen blueberries
  • 1/2 frozen banana

Depending on your taste, and nutritional goals you might like to add the following into the base of your Acai Bowl….

  • 1 tbls. Chia Seeds – for fibre and healthy fats
  • 1 handful spinach leaves
  • 1 scoop of protein power – I love Barre Blends Vanilla

  • Chopped fruit – Strawberries, banana, kiwi fruit, mango or berries.
  • Superfoods – Chia Seeds, Bee Pollen or Cacao Nibs
  • Homemade muesli or granola – you can find my homemade muesli recipe here
  • Chopped nuts, LSA or coconut flakes
What you’ll need to do:

Run the Acai smoothie pack under warm water for a few seconds until it starts to defrost slightly. Place into the blender with the blueberries and banana. Slowly add the coconut water  or almond milk until you reach a thick soup like consistency. You don’t want to pour all of the liquid into the blender at once or otherwise your Acai bowl will end up more like a smoothie! Add in any additional super foods to supercharge your bowl! I love adding in some chia seeds and protein to give it an extra nutritional boost.

Once the Acai mixture is combined, pour into a serving bowl and top with your favourite toppings!
