Slow Cooked Lamb Shanks
Slow cooked meals are one of my favourite go-to meals during the cooler months of the year, and are an absolute godsend during the busy working week.
This slow cooked lamb shank dish is honestly fool-proof, simply place everything into the slow cooker before you leave the house in the morning and you’ll return to a perfectly cooked nourishing meal.
What you’ll need – serves 2
- 2-4 Organic Lamb Shanks
- 400g tin organic tinned tomatoes
- 400g tin organic chickpeas
- 1 tbl. Ground Cumin
- 1 tbl Cinnamon
- 1 tsp Turmeric
- 1 litre organic chicken stock or bone broth
- 1 large zucchini chopped into chunks
- 1 cup sweet potato chopped into chunks
- 1/2 head cauliflower
What you’ll need to do:
In the bowl of your slow cooker, place the chopped zucchini, sweet potato and chickpeas to form a base layer. Lay the shanks on top of the vegetables, sprinkle over the cumin, cinnamon, turmeric, stock and tinned tomatoes. Turn the slow cooker onto low and leave for 8-12 hours. You will know the lamb shanks are ready when the meat is tender and begins to fall off the bone.
To serve, lightly steam cauliflower florets and then pulse lightly in the food processor until it resembles the consistency of ‘rice’. Lay a generous spoonful of the cauliflower rice into a bowl and top with the lamb shank and vegetable mix and a generous amount of chopped coriander.
