Paleo Fish Tacos

I’ve always been a huge fan of Mexican food. It reminds me of summer BBQ’s with friends, sharing simple, fresh and delicious food.

My Paleo Fish Tacos are just that; a simple, fresh and delicious meal that can be whipped up in no time and best shared amongst the company of good friends!

What you’ll need

Serves: 2 servings
For the Fish
  • 2 medium pieces of firm white fish, cut into 3 cm strips
  • ½ cup tapioca flour
  • ½  cup almond meal
  • 1 egg lightly whisked
  • 2 teaspoons chilli flakes
  • Coconut oil for frying
Guacamole
  • 1 ripe avocado mashed
  • 1 lemon juiced
  • 1 tbl organic sweet chilli sauce
  • 3 tbl chopped coriander
  • Salt and pepper to taste
To Serve
  • 4-6 baby cos lettuce leaves
To make the fish, place the egg, tapioca flour and almond meal into three separate bowls. Coat the fish in the egg, followed by the flour and then finally the almond meal. For an extra crunchy fish batter, you can double crumb the fish by repeating another round of the egg wash, followed by almond meal.
Heat up enough coconut oil in a saucepan so that the coconut oil is approx. 1-2cm deep. Use a high heat. Carefully add the coated fish strips to the hot coconut oil. Fry the fish pieces until the almond meal turns a golden brown (this takes approx. 5 minutes). Place the fish in a bowl lined with a paper towel to soak up any excess oil.
To make the guacamole, in a bowl place the mashed avocado, lemon juice, chopped coriander, sweet chilli sauce and mix together well seasoning with salt and pepper.
Wash the lettuce leaves and pat dry with a paper towel. Layer 2-3 fish strips onto of a lettuce leaf. Top with guacamole and serve.
This meal is perfect as it is, or served with BBQ corn cobs and organic sour cream.
