Paleo Banana Pancakes
I’ve always loved pancakes! They bring back lovely memories of my childhood, when Dad would make them for us on the weekends and let us pour the batter into the initials of our names.
These days when I’m out at a cafe I wouldn’t normally order pancakes, as I find they are topped with sugary sauces and syrups. So whenever I feel like pancakes, I make up a batch of these healthy paleo ones.
What you’ll need – serves 1
- 1 ripe banana
- 1 egg
- 2 tsp cinnamon
What you’ll need to do:
Blend the banana, egg and cinnamon in a food processor until smooth. In a frypan gently melt a little coconut oil, place a medium spoonful of the pancake mix into the frypan. Once bubbles appear flip the pancake over. You’ll know when the pancake is ready as it will fill firm to touch.
Serve pancakes as a stack topped with fresh fruit, a dollop of yoghurt! Or cooled on their own as a quick and easy snack on the run.
