Maple-glazed Salmon Salad

When busy nights call for dinner to be ready in less than 20 minutes, this is maple-glazed salmon salad is a great fuss-free, nutrient dense meal that the whole family will love. 

Salmon is a wonderful source of Vitamins B12, Vitamin D and Omega-3 essential fatty acids which is great for healthy joints and skin, and especially important for pregnant mums as Omega-3 has been said to aid the neurological development in unborn children.

Medium sized bag of mixed leaves

1/3 cup (35g) hazelnuts, toasted, coarsely chopped

 

what you’ll need to do:

Combine the maple syrup, mustard and tamari in a small bowl. Coat the salmon and set aside for 10 minutes. Preheat the oven to 180, line a baking tray with grease proof paper and place the salmon on the lined tray. Cook for 10-20 mins or until cooked to your liking. 

While the salmon is resting, combine the lentils, beetroot, mixed leaves, hazelnuts and goats cheese in a large bowl. Season with salt and pepper. Divide the salad among serving plates and top with salmon!
