Lemon Joy Balls

Well my lemon joy balls are just the thing you’ve been searching for!

These babies take less than 10 minutes to make, are sugar free and packed full of healthy fats, magnesium and zinc! All the ingredients you need for glowing skin!

What you’ll need:

2 1/2 cups raw cashew nuts
1 cup shredded coconut
2 tablespoons rice malt syrup
Zest and juice of 2 lemons

What you’ll need to do:

Zest and juice the lemons, leaving the juice and zest to the side. In the blender, place the cashews and process until they are a fine crumbly powder. Add the lemon juice, zest, rice malt syrup and coconut and blend until combine. Your joy ball mixture should be moist and sticky. Roll the balls into bite size pieces in your hands, and roll in coconut. Pop into the fridge or freezer to set. There you go, a simple nourishing snack that you can eat on the run.
