Healthy Shepherds Pie
This recipe is a healthy alternative to the traditional Shepherds Pie and is packed full of nutrients!
It is perfect for a mid-week lunch or dinner, and make 4-6 serves which also freeze brilliantly. Once you try this healthy Shepherds Pie, I’m sure it will be quickly added to your weekly cook-up menu.
What you’ll need
- 1 tbl. coconut oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2 carrots, finely chopped
- 2 zucchini, finely chopped
- 1 celery stick, diced
- 400g grass-fed beef mince
- 400g organic tinned tomatoes
- 2 teaspoon ground cumin
- Pinch chilli flakes
- 1/2 cup chopped coriander
- 500g sweet potato, coarsely chopped
what you’ll need to do
Preheat the oven to 180C, and lightly grease an oven-proof baking dish with coconut oil.
Place the sweet potato in a steamer set over a saucepan of boiling water. Steam the sweet potato for 10-15 minutes or until soft. Place sweet potato into a large bowl, add a little salt and pepper and mash.
To make the meat mixture, fry the onion and garlic in coconut oil, until softened.
Add the carrot, zucchini and celery and cook, stirring occasionally until all the vegetables are slightly cooked through. Add the mince and cook until brown.
Stir in the tomato, cumin, chilli flakes and simmer for 25 minutes, stirring occasionally.
Allow the meat to cool and then stir in the coriander.
Place the meat mixture in the base of your dish and spread the sweet potato evenly over the top. Use a fork to rough the surface and place in the oven for 30 minutes until golden.
