Healthy Coconut Rough Balls

Don’t say I didn’t warn you… healthy coconut rough balls are seriously addictive!

These bad boys are packed full of antioxidants and good fats and honestly taste way too good to be considered healthy! They are the perfect 3pm pick me up snack, and take less then 10 minutes to whip up, simply throw all your ingredients into the blender and roll them up into bite-size balls.

Not only do they taste delicious, but the health benefits of cacao are phenomenal: rich in antioxidants, essential vitamins and minerals, promotes healthy skin and mood enhancing…I dare you to stop at just one!

What you’ll need:

Makes 20 balls.
1 cup medjool dates
1 cup shredded coconut
¼ cup cacao powder
½ tsp vanilla extract
½ tbsp water
⅔ cup buckinis

What you’ll need to do:

Lightly toast the coconut in a pan on low heat until lightly golden. Add all ingredients except for the buckinis into a food processor and pulse until sticky when pressed between your fingers. Add the buckinis and pulse a few times until mixed through. Be careful not to over pulse. Roll the mixture into balls, coating in desiccated coconut and place in an airtight container in the freezer.
