Healthy Anzac Biscuits

With Anzac Day coming up on the weekend (and the crazy weather in Sydney) I’ve been experimenting with a healthy version of Anzac biscuits! I think you’re going to love them!

What you’ll need, makes 20 biscuits

  • 125 g unsalted butter.
  • 1/2 cup rice malt syrup.
  • 1 teaspoon bicarbonate of soda.
  • 2 tablespoons boiling water.
  • 1 cup rolled oats.
  • 1 ripe banana mashed.
  • 3/4 cups desiccated coconut.
  • 1 cup plain flour
  • 1/2 cup roughly chopped macadamias.

What you’ll need to do

Preheat your oven to 150ºC, and line two baking trays with baking paper.

In a small saucepan, melt the butter and rice malt syrup on low stirring until bubbles begin to form.

In a separate bowl, combine the bicarbonate of soda with boiling water and add to butter mix.

Combine the remaining ingredients in a large mixing bowl. Pour melted butter mix into dry ingredients and stir to combine.

Roll 1 tablespoon of the mix into a ball and place on tray, flattening into a disc.

Bake for 15-20 minutes or until golden brown.
