Zoodles with meat sauce
My zoodles with meat sauce has been a recent addition to our household menu, and I have to say, it was a HUGE hit! This deliciously light meal is quick and easy to prepare, full of essential nutrients and good fats and is perfect for a mid-week dinner with lots of leftovers for work the next day.
I love using zucchini noodles for a lighter option in place or normal pasta. Not only are you getting loads of fibre, but you’re also receiving all the beautiful benefits of extra greens in your meal, such as potassium, antioxidants and essential Vitamins A, B C.
What you will need
500g Grass Fed Beef Mince
1 x 400g diced tinned organic tomatoes
1 onions, finely chopped
1 garlic clove, crushed
1 tbsp. extra virgin olive oil
2 tsp. chilli flakes
1 tsp. oregano, finely chopped
¼ cup fresh basil, finely chopped
¼ cup fresh parsley, finely chopped
1 tsp. lemon zest
Himalayan salt and pepper to taste
What you need to do
In a large saucepan add a little olive oil, and saute onion, chilli and garlic. Add the mince and brown for 5 minutes. Add tomatoes, lemon zest, herbs and seasonings. Bring to a boil and then reduce heat to a simmer, cook for 10-15 minutes.
To make the zoodles, remove the ends of your zucchinis and place them through the spiraller. Place the noodles into a large bowl and cover with boiling water, allowing them to stand for 5 minutes, or until they become soft. Drain well using a colander.
To serve, place your noodles into a pasta bowl and top with meat sauce. Garnish with freshly chopped basil and serve immediately.
