Apricot, macadmia and tahini bliss balls
I love making sweet treats to share with family, friends and colleagues, particularly when you know everyone will love what you’ve made. These apricot, macadamia and tahini balls are deliciously sweet and crunchy and the tahini brings a great sesame flavour which also leaves you satisfied and able to stop at one (maybe?!)
Fuss-free and a cinch to make, these balls have been a hit at home and in the office!
Makes around 12-14 balls
What you’ll need:
1/2 cup dried apricots (where you can find organic, sulfate free to avoid nasty preservatives)
1/4 cup tahini
1/2 cup macadamia nuts
1/2 cup almonds
1/4 cup shredded coconut
2 tbl maple syrup
3 tbl coconut oil, melted
What you need to do:
In a food processor, combine the tahini and apricots until apricots are finely chopped. You can continue to add the macadamia nuts and almonds if you have a high quality processor or blender and blend until it forms a think paste like consistency.
If you don’t have a high quality processor, transfer the apricot and tahini mixture into a large bowl and add the macadamia nuts and almonds to the processor and pulse until roughly chopped. Add coconut and continue to process until combined.
Combine the nut mix, apricot mixture and add maple syrup and coconut oil and mix together.
Wet your hands slightly to avoid the mix sticking to your hands and shape the mixture into balls.
These balls are ready to eat straight away or you can refrigerate before eating.
Store in an air tight container for up to 7 days (if they last that long!).
