5 ingredient Corn and Zucchini Fritters

These corn and zucchini fritters have been a huge big hit with the whole family! They are super simple to make and make a versatile breakfast, pre-dinner entree or snack on the run!

Emma has loved helping me in the kitchen lately, and this recipe is perfect for little helpers; cracking eggs and mixing everything together! My 5 ingredient corn and zucchini fritters are the epitome of a nourishing fuss-free meal (or snack!).

 

5 ingredient Corn and Zucchini Fritters

Makes approximately 12-14 fritters

 

What you’ll need

To serve

1 tomato, diced

1 avocado, diced

1/2 cup coriander, chopped

2 tbl tomato relish

 

WHAT YOU’LL NEED to do

Cut the fresh corn off the cobb, and place in a medium sized bowl with the zucchini, eggs and milk. Whisk together until combined. Gradually stir in the sifted flour and cumin, salt and pepper.

Heat some coconut oil in a non-stick frying pan over medium heat. Using a tablespoon, place heaped spoonfuls of the fritter mixture in the pan and cook in batches. Using a spatula, turn them once, until golden and cooked through. 

Serve the cooked fritters with chopped tomato, avocado, coriander leaves and tomato relish.

Store in an airtight container in the fridge for 3-5 days.
